- I home-made the gnocchi, boiled and fried
- I substituted spinach for peas/corn
- Some type of nut is needed, walnut/pistachio?
- Goats cheese can be turned into a sauce with pasta water maybe.
- Onion, asparagus?
Serves 3
- 450g butternut squash, peeled and cut into small chunks
- 1 garlic clove
- 2 tbsp olive oil
- 500g pack gnocchi
- 200g young leaf spinach
- 100g goat's cheese
- Roast squash with oil and garlic (remove garlic before it burns)
- Boil gnocchi, then 1 minute out, add spinach
- Crumble goats cheese over everything
