Butternut Squash and Goat's Cheese Mixup

Improve:
  • Double recipe for leftovers
  • I home-made the gnocchi, boiled and fried
  • I substituted spinach for peas/corn
  • Some type of nut is needed, walnut/pistachio?
  • Goats cheese can be turned into a sauce with pasta water maybe.
  • Onion, asparagus?


Serves 3
  • 450g butternut squash, peeled and cut into small chunks
  • 1 garlic clove
  • 2 tbsp olive oil
  • 500g pack gnocchi
  • 200g young leaf spinach
  • 100g goat's cheese

  1. Roast squash with oil and garlic (remove garlic before it burns)
  2. Boil gnocchi, then 1 minute out, add spinach
  3. Crumble goats cheese over everything
